Then, make a “salsa” of 1/2 cup of corn, 1/2 cup of cut-up tomatoes, 1/2 cup of black beans (or more, if you’re us), 1/2 cup of cut up avocado and a pinch of lime and a couple of tablespoons of cilantro (fresh).
Mix together. Pour over the cooked chicken breast, serve and ENJOY.
It is so, so, so good and is ridiculously easy.
(You’re supposed to include brown rice with this meal… but I’m not much of a rice person.)
