My kitchen prowess is unrivaled.
Ya’ll, I’m fancy.
Exhibit A. Last night’s dinner.
(Gorgeous, no?)
2 potatoes, 1 bunch of brocolli, 2 hand-fulls of baby carrots, 1 red pepper, 1/2 of one red onion, green beans, cherry tomatoes.
Salt & pepper. Seasoned salt. (A touch). Olive oil.
30 minutes – 400 degrees.
DONE.
We are so fancy, we even ate it off the fancy baking sheet.
And that was, “Cookin’ with Ky.”
Note: Real Simple, where I found the recipe, indicated that you should throw some bone-in chicken with the veggies, but all we had were frozen chicken breasts. SO… we ate veggies.

Sounds delicious! I love roasted veggies. Though I would have totally had to have brown rice or couscous to go with it. I love carbs too much :)(I love "Cookin with Ky"!)
